Simple Pancakes from Jennifer Morris, East of Scotland

Ingredients

  • 3 heaped tablespooons of self raising flour
  • 3 heaped tablespoons of sugar
  • 1 small teaspoon baking powder
  • A pinchof salt
  • 2 tablespoon of oil
  • 1 egg
 
 

Method

Heat a ggriddle/girdle/frying pan.
Beat the egg and oil
Add the dry ingredients and mix to a dropping consistency with butter milk or milk
Drop one tablespoon of the mixture (one fo each pancake) on to the girdle
When underside is cooked turn over and cook until both sides are brown.
Add decoration to please
